How To Make Grain Free Batata Tortillas

Have you heard about the trending grain free diet?? If you’re a Latina like me, I’m sure you said IMPOSSIBLE! That’s definitely what I said when my naturopath told me a grain free diet may help me. My immediate response was “You know I’m Dominican, right??” I mean we eat rice almost every day! 

But my health said otherwise. So I decided to try it. I started thinking about how I would replace rice at dinner. What would I eat with my Pollo Guisado? I came up with this recipe to make vessel for dinner.

I have read a lot of recipes with alternatives to corn in tortillas. Unfortunately, most include flour. That wouldn’t work for my plan so I came up with my own! You can serve with a salad with lime dressing like I made here.

Grain Free Batata Tortillas

Grain Free Tortillas made from Batatas
Prep Time 2 minutes
Cook Time 20 minutes
Servings: 2
Course: Main Course
Cuisine: Dominican Cooking, Grain Free Cooking

Ingredients
  

  • 2 Batatas
  • ½ tsp Salt
  • 1 tbsp Butter Optional

Equipment

  • Tortilla Press

Method
 

  1. Peel 2 medium batatas
  2. Cut into quarters or smaller for faster cooking
  3. Add salt
  4. Boil until fork tender
  5. Drain
  6. Mash with a potato masher
  7. Add optional butter
  8. Line your tortilla maker with plastic wrap
  9. Scoop a tablespoon of the mixture on to the press
  10. Place "tortilla" on to a hot, dry skillet
  11. Brown on both sides
  12. Fill with your favorite filling and enjoy!

Notes

Batatas are very dense. Much more than their counterparts. I added a bit of salt and butter while mashing but if you’re vegan, or watching fat, you can certainly omit them.
This experiment came out so good! I stuffed it full with my chicken and lots of fresh salad with lime dressing.
