- Peel 2 medium batatas
- Cut into quarters or smaller for faster cooking
- Add salt
- Boil until fork tender
- Drain
- Mash with a potato masher
- Add optional butter
- Line your tortilla maker with plastic wrap
- Scoop a tablespoon of the mixture on to the press
- Place "tortilla" on to a hot, dry skillet
- Brown on both sides
- Fill with your favorite filling and enjoy!
Notes
Batatas are very dense. Much more than their counterparts. I added a bit of salt and butter while mashing but if you're vegan, or watching fat, you can certainly omit them.
This experiment came out so good! I stuffed it full with my chicken and lots of fresh salad with lime dressing.
