Dominican Spaghetti

Dominican Spaghetti is a perfect weeknight meal or pack it for a beach trip!

Ingredients
  

  • 1 Pkg Dried spaghetti Or a shape that you like
  • 1 Pkg Chicken Thighs I like boneless, skinless
  • 1 Tsp Dominican Sazón Made fresh or bought from me!
  • 1 Tsp Tomato paste I love the tube to keep it fresh
  • 1 Tbsp Olives
  • 1 Tsp Capers
  • 1 Small Red Onion sliced
  • 1 Small Bell Pepper sliced
  • 2 Limes squeezed
  • Salt to taste
  • Olive oil for pasta and to cover your pan.
  • 1 Tbsp Sugar
  • ½ cup water

Method
 

  1. Marinate chicken with sazón and lime juice.
  2. Boil pasta per box instructions.
  3. Add oil to cover the bottom of the frying pan.
  4. Sprinkle sugar evenly.
  5. Let sugar brown. It should be dark but not burnt.
  6. Sauteé Chicken until all sides are covered in the browned sugar.
  7. Add water and cover until fork tender.
  8. Add onions, peppers, olives, capers and tomato paste.
  9. Drain pasta reserving ½ cup of boiled water.
  10. Mix together. Add pasta water if needed.
